Mhammara by Adawat

2 sweet red peppers
4 cloves garlic
1 small yellow onion
1 large tomato
Some olive oil to coat the veggies

2 Tbs tomato paste
1 cup (50g.) walnuts
chill pepper
1 tbsp pomegranate molasses
1 tsp salt
1/2 tsp cumin
1 tsp smoked paprika

1/4 (60ml) cup olive oil

Cut red peppers in half and remove seeds, peel the garlic. Cut the onion in half. Put them on a roasting tray, coat with olive oil, and roast at 200c for 30 minutes in your Breville/Sage oven or until peppers are charred. Place sweet peppers in a bowl with plastic wrap, wait for the skin to separate them peel.

Place all the ingredients in the bowl of your KitchenAid Food Processor and slowly add the olive oil at the end (in a steady stream). Makes a great topping for pizza, manaqeesh, bread, veggie sticks or chips.
